As a sidenote: if you choose to use seafood as your protein, you’re better to undercook it in the first step. Overcooking seafood is really easy to do and just ends up tasting hard and rubbery (in the case of calamari and shrimp/prawns), or in the case of fish, flakey and falling apart.
